This project will investigate the effects of adding hops to honey during the fermentation process of brewing mead. Samples will be prepared according to established mead recipes from local businesses, and the hop addition is adapted from a cider recipe with similar aims. The final products will be compared with mead sourced from other local meaderies in New England to compare flavor profiles by metabolic analysis. Our goal is to improve the fermentation process and provide insight into alternative flavor profiles that are available to the local community.
